A new kind of yum

Cook an onion in oil, hot, until the edges start going brown. Toss in some chopped shiitake mushrooms, then add a splash of water so the onions cook through. Mind the steam!

Add a splash of soy sauce, a dash of balsamic vinegar, a couple pinches of ground clove, and some black pepper. Serve over pasta.

I came across the recipie by accident as well. Try using red wine instead of water, and adding some sour cream so it clings to the noodles.

Mmm!

Alexis likes to cook onions on low heat with just a touch of oil (non-stick pan works well here) for several hours. They come out looking only mildly brown, but tasting very yummily caramelly. They're excellent with pesto sauce and pine nuts on pasta or gnocchi.
