I am a kitchen goddess. In addition to cleaning the cupboards, I have made the perfect quesadilla, made of goat gouda, roasted red pimento, roasted Anaheim chile., and sharp white cheddar cheese, all on vegetillas, cooked until perfectly browned. On top is home-made mango salsa, made from mangoes with the skin on, some rice vinegar, and a couple jalapeños and hungarian wax peppers.

whoa. You truly ARE a kitchen goddess. Your description of that quesadilla was so freaking intense and amazing that I am practically drooling, and I am not typically a girl who drools over anything. MANGO SALSA? WITH SKINS? Carrie better watch out. You are a definite treasure.

Well, Carrie is too, so it works out.

Mango salsa works rather well with skins. It's more flavorful, too, and since the store didn't have habañero peppers or scotch bonnet like I wanted, it is a nice substitute. Far milder, but rather good.

And I'm a bit of an esoteric vegetarian. Mango salsa is good, I've seen it mentioned before, and I had a jamaican sauce that had mango in it, so I could see it was good.

It's what you'd expect: make salsa, minus tomatoes and plus mango. Works like a charm.
